With one full year under his belt as the executive chef of Proof, Diego Rodriguez is launching a Young Cooks Dinner Series to shine the light on the next generation of culinary all-stars. “Without Sean Wilson giving me the green light to think like a chef, I wouldn’t have devoted myself to my craft like I do now. I know it’s super difficult for other cooks in other restaurants to get that chance, so I’m aiming to give those who I see have the potential that one shot,” Diego says.
These dinners will be available for one night only and each will showcase one local cook or sous chef. The young cook will design the menu (posted here in the event discussion), while Diego will help them bring these concepts to life. https://proofdsm.com/young-cooks-dinner-series
On the heels of the first feast from Zachary Acevedo of Harbinger, next up is Caleb Crossett from The Cheese Bar! Caleb Crossett started cooking for Marriott Coralville in 2015 when he was 15. In 2017, he moved on to Iowa Culinary Institute and started working at the Des Moines Marriott downtown while completing the culinary program (which he did in 2019). Crossett started at Cheese Bar in December 2018 and says “it’s been the perfect fit ever since.” Join us for one of two seatings to savor his five-course dinner.
