With one full year under his belt as the executive chef of Proof, Diego Rodriguez is launching a Young Cooks Dinner Series to shine the light on the next generation of culinary all-stars. “Without Sean Wilson giving me the green light to think like a chef, I wouldn’t have devoted myself to my craft like I do now. I know it’s super difficult for other cooks in other restaurants to get that chance, so I’m aiming to give those who I see have the potential that one shot,” Diego says.
These dinners will be available for one night only and each will showcase one local cook or sous chef. The young cook will design the menu (posted here in the event discussion), while Diego will help them bring these concepts to life. https://proofdsm.com/young-cooks-dinner-series
As part three of the series that began with Zachary Acevedo of Harbinger and Caleb Crossett from The Cheese Bar, the final Young Cooks Dinner Series menu is designed by Ryan Chindlund of Aposto. A native of Okoboji, Iowa, Ryan Chindlund graduated from the Iowa Culinary Institute in 2019. He has been working at Aposto for 2 ½ years and currently acts as the sous chef at the Sherman Hill Italian restaurant. Moving forward, Chindlund hopes to move to another city and explore more dining scenes
